If you are an avid baker, it makes sense financially to buy flour in bulk, as long as you store it properly. According to the Food Storage Institute and the University of Missouri Extension, all-purpose and white flour will last six to eight months in airtight, moisture proof containers. The shelf life more than doubles if you are able to store flour in such containers in the freezer. Whole wheat flour will last six to eight months if kept in the fridge in airtight containers and in the pantry it will last one month.Use tin or metal cans, plastic containers or glass jars as long as they have tight-fitting lids.

1 Purchase airtight storage cans or other containers from your local cooking store, hardware store or online. You could also ask friends and family members who customarily store dry goods if they have extra storage cans.

2 Check the flour for insects before storing. Return the flour to the store and exchange it for a new package if you find traces of pests. When purchasing flour, avoid buying packages that are ripped. Check the surface of bulk bins for insects.

3 Place enough flour that you will use for two to three weeks in a small airtight can or container. This way you do not have to disrupt the storage of the bulk flour too often. Place the small can on a shelf in a dark, cool and dry area of your kitchen or pantry. If there is room, store the small container in the fridge, so it is away from the heat generated from cooking.

4 Pour the remaining bulk flour in an airtight can (or other container) that has a tight-fitting lid. You can even store flour in a new, clean garbage can. In this case leave the flour inside the bag. Every time you open the bag, make sure to press all of the air out, fold it tightly and clip it with clothespins.

5 Place the bulk can off the ground if possible, in a dark, dry area. Ideally the storage area should not be colder than 00 degrees Celsius and no warmer than 21.1 degrees Celsius.

6 Designate two bulk cans for each type of flour you are storing. Empty the first bulk container and clean before adding new flour. If you purchase new flour before the first bulk can is emptied, store the new flour in the second container.

Tips and warnings

According to the University of Missouri Extension, all-purpose flour will last several years if stored in the freezer at a temperature of -17.8 degrees Celsius. As above, pour enough flour for several weeks of daily use in an airtight container and leave outside the freezer. Pour the rest in airtight containers and place in the freezer.
