It can be annoying to pull salad greens from the refrigerator and realise they have discoloured. It can also be disheartening when a completed salad starts to turn brown and wilt before you have a chance to sit down and eat it. Salads and lettuce can brown and wilt for a variety of reasons. Whether you are using romaine, iceberg, mesclun or any number of salad green types, they can all fall prey to discolouration. Luckily, there are several things you can do to keep your salads green.

How to Keep Salads Green

Buy the freshest salad ingredients you can. If possible, purchase salad greens at a local farmers market, or anywhere you can buy them as soon as they are picked. Avoid prepackaged lettuces or salad kits, unless you know you will use it all at once and the salad will not sit. Prepackaged greens brown quicker once opened; fresh, whole salad leaves keep longer.

2 Dry salad greens, if damp, with a paper towel before you store it or use it. Store greens at the correct refrigerator setting. Program your refrigerator to be 4.44 degrees Celsius lower. If you have humidity controlled crisper drawers, store lettuce and greens separate from hard-skinned produce. Push the humidity control lever all the way over to high, as this will keep air flow out of the drawer.

3 Store lettuce leaves and salad greens in a dry zip-lock bag lined with paper towels. Keep your eye on your vegetables if you will not be using them right away. If you see water pooling in the bags, drain them immediately. You do not want vegetables standing in water, as this will wilt and brown them quickly. Store lettuce and produce in the vegetable crisper portion of your refrigerator if possible.

Prepare your salad using a salad spinner. Salad spinners are an inexpensive tool and are essential if you eat a lot of salad. Spin the salad until all the moisture has been removed, and keep the lettuce leaves whole as you spin. One reason lettuce and vegetables brown is because of the chemical reaction caused by damage to the cells. Cells are damaged when lettuce leaves are cut up or torn apart, so keep your lettuce leaves whole for as long as possible.

Avoid breaking up greens or mixing greens with other salad ingredients or dressing until right before you serve the salad. Salad does not keep well when it is chopped up and mixed with wet vegetables like tomatoes. If you must store the salad for an hour or two, and you cannot keep all of the ingredients separate, place a wet paper towel over the salad and place it in airtight container in the refrigerator.
