How to Paint Damask on Cakes

Stencils are used to paint damask patterns onto cakes. The elegant designs are popular in the wedding cake industry. Traditionally, damask is done in black icing on a white background, but now bakers use an assortment of colours to complete this technique. Cakes smoothly iced in buttercream or fondant are ideal for the damask technique.

Instructions

Top of the Cake

1 Select a stencil for your cake.

2 Place the stencil onto the top of your iced cake.

3 Use a trowel to carefully add a large scoop of frosting to the centre of the stencil to help keep it in place. If you don't have a trowel, you can use a hotel room key or credit card that has been sanitised.

4 Spread the frosting out until it is evenly distributed throughout the stencil. You may need to add more frosting after your initial scoop to cover the stencil area.

5 Remove the stencil from the cake gently, lifting it from one side to the other until the entire stencil is off.

Side of the Cake

1 Choose a stencil that will fit on the side of your cake.

2 Put the stencil where you would like it, and use dressmaking pins to hold the stencil in place.

3 Use a trowel to evenly spread icing onto the stencil.

4 Remove the pins and carefully take off the stencil by grabbing one side and pulling it off slowly toward the other side.

5 Use a clay tool to sharpen any edges that may have smeared.

Tips and warnings

Embellish your damask cake with a satin ribbon or edible flowers.

Practice the damask technique on styrofoam before you try it on a cake.
