Apple cider vinegar is fermented from cider. Microorganisms cause the conversion of alcohol to acetic acid, the main constituent in vinegar. Traditionally, apple cider vinegar has found a place in alternative medicine as an ingredient in various remedies. The natural remedy has largely been replaced by more effective medications; however, new and traditional medicinal uses are being investigated. Apple cider vinegar is available from health food shops and some supermarkets. Home remedies should never be a substitute for regular medical care.

Help control blood sugar

Most of the health effects of apple cider vinegar are due to acetic acid. At Lund University in Sweden, 12 healthy volunteers were served white bread with vinegar in three strengths for breakfast. Controls received bread without vinegar. The researchers in the Department of Food Technology, Engineering and Nutrition monitored blood glucose and insulin levels for over two hours after the meals and found lower blood glucose levels could be attributed to higher concentrations of acetic acid. Subjects who had vinegar with breakfast also reported feeling less hunger than those who ate bread alone. The study was published in the September 2005 "European Journal of Clinical Nutrition". If you are diabetic and wish to try this remedy, be sure to consult a health care professional and to monitor blood sugars carefully. Vinegar has not been proven to prevent or treat diabetes.

Conserve bone mass

Lower cancer risk

Apple cider vinegar contains polyphenols, plant substances that have antioxidant properties known to reduce cancer risk. Vinegar may protect against bowel cancer, according to researchers at Arizona State University's Department of Nutrition in the U.S. In the May 2006 "Medscape General Medicine," the researchers explain how acetic acid forms acetate ions in the colon that have been shown to inhibit tumour growth.

Possible cardiovascular protection

High LDL cholesterol levels in the blood contribute to the buildup of plaque in the arteries, or atherosclerosis. Researchers at the Islamic Azad University in Iran investigated the effects of vinegar combined with high dietary cholesterol in rabbits. Animals were randomised into four groups and fed either a normal diet, a high cholesterol diet, or a high cholesterol diet with either 5ml or 10ml of added vinegar. Blood samples taken three hours after meals showed lower LDL cholesterol levels in rabbits who were fed vinegar. Results were dose-dependent. The study was published in the January 2010 issue of "Lipids in Health and Disease". More research is needed to determine if apple cider vinegar can prevent atherosclerosis in humans.
