Yellow Rocket

Yellow rocket (Barbarea vulgaris) is a member of the mustard family. It flowers in early spring with bright yellow blooms. Yellow rocket can grow as tall as 3 feet, and multiple stems emerge from each crown. The flowers grow in terminating clusters as long as 5 inches. Yellow rocket is rich in vitamin C and you can eat it raw as a salad green or you can cook it. Yellow rocket is similar in flavour to turnip greens.

Common Groundsel

Common groundsel or tansy ragwort (Senecio vulgaris) has long, lobed leaves with rounded ends. Groundsel can grow as tall as 18 inches and has hollow stems that branch multiple times. The button-shaped yellow flowers bloom in clusters and can be as large as 2 inches. Groundsel is a member of the thistle family, and each season up to four generations of weeds can begin blooming at the same time. Groundsel prefers nutrient-rich, damp soil and does not tolerate dry, hot weather well. Groundsel is poisonous to horses and cattle and can be toxic to humans.

Common Dandelion

Common dandelion (Taraxacum officnale) has smooth, light-green stems with large flowers at the top of each stem. The bright yellow flowers can grow as large as 1 1/2 inches in diameter. Each flower head sports up to 300 petals; while each petal does not appear to be more than a petal, each is a flower unto itself. This type of flower is called composite. Dandelions are voracious eaters; they pull nutrients from the soil at a much more rapid pace than other plants. Dandelions can be eaten as salad greens, and they are high in iron and other nutrients.
